[Press Release] Exquisite strawberry wine now available in Yokohama!
Yokohama Winery, Yokohama's only fruit wine brewery operated by Style Japan Associates LLC (head office: Yamashita-cho, Naka-ku, Yokohama), will release Yokohama's first ever "Yokohama Strawberry Wine (Sparkling)" (3,000 yen excluding tax; 375 ml) made using 100% Yokohama-grown strawberries on March 14th and is now accepting pre-orders.

Yokohama Winery is an urban winery without an orchard that opened in Yokohama in 2017. It purchases grapes from all over the country and brews and sells Japanese wine in Yokohama. (There is almost no cultivation of wine grapes in Yokohama, let alone Kanagawa Prefecture.)
This year, in their second season, they collaborated with Nagasawa Farm in Yokohama and successfully commercialized strawberry wine made from strawberries grown in Yokohama. This was the first strawberry wine made in Yokohama.
Nagasawa Farm (Nippa, Kohoku Ward) is where Nagasawa Yusuke and his wife Sayaka began cultivating strawberries in 2013. Mr. Sayaka was born in Fukuoka, a strawberry-producing region, and the idea came from their desire to produce delicious strawberries in Yokohama. Nagasawa Farm strives to reduce the use of pesticides in its cultivation, and harvests strawberries when they are fully ripe and have high sugar content. As well as selling them at the farm's direct sales store, they are also used at hotels, pastry shops, and restaurants in Yokohama. However, fully ripe strawberries do not keep well and need to be consumed quickly. Another issue was the loss of strawberries that could not be sold because they were overly ripe, had a misshapen shape, or had poor coloring.
In 2017, his wife Sayaka met Yokohama Winery representative Yoshiko Machida at the "Hama Food Concierge Course," an initiative related to local production and consumption in Yokohama City, and this led to the idea of commercializing strawberry wine.
Strawberries are delicate fruits with thin skins that are easily bruised during harvesting, but the prospect of using them as an ingredient in wine now means a new way to reduce waste has been discovered.
The resulting strawberry wine was a sparkling wine with a stronger flavor than other typical strawberry wines. At Yokohama Winery, the carefully grown strawberries from Nagasawa Farm were slowly and carefully brewed into wine. Compared to other wines, the deep, transparent red color stands out. It is a dry sparkling wine with the sweetness of strawberries remaining.
Nagasawa has high hopes for strawberry wine, saying, "I hope it will continue to develop as a new form of local production and consumption in Yokohama."
Machida Yoshiko said, "I would be happy if the winery could take on new challenges using fruit grown in the city. We would like to continue to actively take on new initiatives."
