Port Town Masked Ball 2022 -Cabernet Sauvignon-

A port town that encounters Western culture. People walk through the town, excited by the new encounters. New Western-style buildings are built one after another, bringing changes to the old port town. The sun sets. Gas lamps are lit one by one on the streets. Out of nowhere, people dressed in Western clothes appear and walk through the port town. Every night, a ball is held somewhere. Old culture meets new culture, and people's hearts dance. Wearing a few masks, the ball unfolds in a splendid fashion, as people get intoxicated by their first taste of red wine. The night deepens, and people's faces turn red. The mysterious red wine will continue to make people's hearts dance in the future.

On the last day of October, after several frosts, the grapes were harvested after waiting for the sugar content to rise. The next day, the farm began preparing for winter, and it was the last day of harvest. We are grateful to the couple at the vineyard for granting us an unreasonable request to extend the harvest. We were able to make a good Cabernet Sauvignon into wine. The grapes were in good condition, so we fermented them with natural yeast and added only small amounts of antioxidants to bring out their natural qualities.

■Tasting notes

A good balance of acidity and astringency. Although it has a high alcohol content, it is an easy-to-drink red wine because of its firm structure and fruitiness. It retains its freshness, so it is recommended to age it further. It goes well with red meats such as beef and lamb.
