The harvest took place on the last day of October, after several frosts, after waiting for the sugar content to rise. The farm began preparing for winter the following day, and it was the last day of harvest. We are grateful to the couple at the vineyard for listening to our unreasonable request and extending the harvest. We were able to make a good Cabernet Sauvignon into wine. Because the grapes were in good condition, we fermented them with natural yeast and added only small amounts of antioxidants in order to bring out their natural qualities. The wine was then aged for 12 months in French oak barrels, and then further aged for approximately 16 months in bottle.
■Tasting notes
A good balance of acidity and astringency. The vanilla aroma of lightly roasted oak barrels adds richness to the fruitiness. It has a high alcohol content and a solid structure. It is a full-bodied red wine that goes well with meals.

Winemaking method: Fermented with natural yeast in stainless steel tanks, aged for 12 months in French oak barrels, then aged for 16 months in bottle.
